Slightly Savory Saturday

Everyone needs a little change of pace from the ordinary and I am no exception. We eat a lot of chicken breasts in this house and sometimes it gets a little ho hum and boring. Today I offer you an easy recipe for Apricot Chicken which is a nice change from just a basic grilled option. Enjoy! Apricot Lemon Chicken 1. Flatten 4 boneless skinless chicken breast halves  to about 1/2 inch thickness. 2. Combine 1 tsp curry powder, 1/2 tsp salt and 1/4 tsp ground pepper and sprinkle over … [Read more...]

A Bit of Dough Love

Sometimes I find a product that I love and I have to share it with the world. Today is one of those days.   I don't do sponsored posts but every once in awhile I find something that makes me so happy that I just have to share the love.   I did not receive any compensation for writing this post---it is just my own personal experience and love of the product. And what is this product, you ask?  Why it is the EZ Doh manual bread maker!    Ginny (AKA The Loaf Lady) and Dave are the creators of … [Read more...]

Today I thought I would share a real fabulous recipe for Florentine Lasagna Roll-Ups.  This recipe looks fancy and difficult but it is a piece of cake. Trust me!  For those wanting a vegetarian option this is the ticket and a tasty one at that. I always find it is easier to assemble all of my ingredients ahead of time and have them all measured out in preparation. That way I don't have to be running all over the kitchen getting the ingredients at the last minute. I also use a "garbage bowl" … [Read more...]

Good Reading? You Betcha!

It is no secret that I love books. From the first time I learned to read---wait---even BEFORE I learned to read I loved books.  My parents both instilled a love of books in me.  My  mom tells the story of one time when a guest was visiting our home and she commented that she was surprised that I was so young and was reading.  Well, what she had seen was me sitting on the steps "reading" a book that had been read to me so often that I had it memorized.  I suspect it was a Dr. Seuss book or Frick … [Read more...]

I am longing for a bit of summer today so I am sharing one of my all time favorite summer salads.  This is one that I make all year long and absolutely LOVE!   So if you are longing for some warmth and sun today why don't you try my take on a fabulous salad. Tomato, Olive and Mozzarella Salad 1 can black olives (I use a large can, drain the olives and slice in half) 3 cups cherry tomatoes (This is usually about one clamshell container.  I like to mix it up if they have the yellow ones … [Read more...]

Turkey Sausage Breakfast Casserole I first made this casserole for Christmas and have made it several times since as it has become a favorite Saturday morning treat.  Each time I tweak it a bit and add different items to spice it up.  My favorite so far is the addition of fresh mushroom slices.  Takes very little effort and the most difficult part is waiting an hour for it to bake. Enjoy. 1 pound ground turkey sausage 4 eggs, lightly beaten 4 green onions, finally chopped 1 16 ounce package … [Read more...]

Today's recipe is a really easy and yummy dish to prepare.  Prep time is about 30 minutes at most and cook time comes in right around 20 minutes.  Easy and yummy. Coconut Chicken Chili 12 ounces skinless, boneless chicken breast halves, chopped 1 cup chopped onion 1 1/2 tsps chili powder 1 1/2 tsps. ground ginger 1/4 tsp cayenne pepper ( would increase this amount if you want a bit of spiciness added) 1 TBSP olive oil 1 TBSP flour 1 14 ounce can unsweetened coconut milk (I used the … [Read more...]

It is soup weather in our house and I am whipping up all kinds of yumminess whenever I can in the form of soup. This recipe is probably the easiest one ever because it uses prepackaged ravioli and takes very little time to prepare.   Quick Ravioli and Spinach Soup Boil 1 9 ounce package refrigerated small cheese ravioli in 2 - 32 ounce cartons of chicken broth with 1/4 tsp onion powder and a dash of pepper for 7 - 10 minutes.  Add 4 cups chopped fresh spinach and 3 cups shredded cooked chicken … [Read more...]

A new feature  on It's Just Life this week is Slightly Savory Saturday where I will occasionally share a tasty recipe that I have tried that is one worth passing along.  Today's is a knock off of a favorite that I get when I visit Olive Garden restaurants----it is a great one to have when the temperatures drop as low as they have been this week and I am happy to share my adapted version of it today.  Enjoy Zuppa Toscana Soup 1 1/2 cups sweet turkey sausage (You can use any kind of … [Read more...]
