I love summer time because we can grill out more easily.  Living in Iowa limits the outside grilling months dramatically because honestly—who wants to go dig the grill out from underneath the snow piles?  Just wait till I make the move to Texas–baby–the grilling will be on all the time!

But I digress. Did you know that you can grill just about anything and make a tasty addition to your meat entree?  On a recent grilling night we grilled up some green beans and mushrooms and they were delightful.

Foil pack grilling makes just about any vegetable perfectly cooked.  I had a few mushrooms in the fridge that needed to be used up so I tossed them in and they were a fabulous explosion of flavor.

Simple steps:

1. Place one pound of fresh green beans on a large piece of foil. ( I de-tailed them but left them whole.)  I also added a few sliced mushrooms at this point.  Onions would be another great addition.

2. Drizzle with a bit of olive oil and salt and pepper to taste.  Other herbs and seasonings added at this point would give different flavors.

3.  Seal foil package up tightly and crimp edges so the yumminess does not escape.

4. Cook on top grill rack for 15 minutes.

5. Remove from heat and open package very carefully —hot, hot, hot!!!  Serve piping hot !

  1. I love green beans. We will have to give this a try. And it’s true you can grill almost anything even Watermelon, I’ve been told. I haven’t tried it, tho.

  2. Good Morning Beth Ann! We grill green beans often and do it just like you except CH doesn’t close up the foil. He doubles the foil and makes it into a four sided pan. We grill asparagus, potato slices, mushrooms, or shhhhhh… carrots like that 🙂 We add a littler Smart Balance and wine to the mushrooms.. delicious! We were going to grill today but it is pouring rain… yay! We needed the rain!

    • Somehow I missed your comment yesterday!!! I don’t usually grill without Mr. Diamond but use the George Foreman inside sometimes. These would be a little hard on that. That is so cool that your boss forwarded my blog! That makes me smile. I got a whole gob of new commenters so maybe some of them are coworkers!! Yippee. I may have to highlight you guys—-I saw the brick thing and thought that was a neat idea. Will talk to you later about it!!!

    • Good for Randy!!! We use the George Forman little inside grill when the weather gets to gross. That is one thing I mm really looking forward to in Texas—more year round grilling with little weather disturbances.

  9. The Better Half would grill in the winter when we lived in Boston. We had a covered deck so the snow wasn’t a huge issue. But the cold. I stayed inside! Oh man, when you move to Texas just think of all the BBQ. Sounds like heaven to me. Do you have a spare room?

  10. My hubby loves to grill year round! Even if he has to shovel off the balcony (it’s a pretty small space, so it doesn’t take long).
