Slighty Savory Saturday

I love recipes that take very little thought and and preparation.  Today’s offering is just that!!!  My niece gets all the credit for this one as she let me sample some when we were at Lakeside in June.  It seemed like the perfect Slightly Savory Saturday recipe.  Do you agree??

Quinoa Tacos

Ingredients:  1/2 cup to 3/4 cup uncooked quinoa

1 package taco seasoning mix or the equivalent of homemade taco seasoning

Scoops Tortilla chips

Shredded cheese–your choice

1. Cook quinoa according to package directions.

2. When quinoa is cooked—mix one package of taco seasoning into the quinoa and stir until well mixed.

3. Scoop a small amount into center of each Scoops tortilla chip placed on microwaveable plate.

4. Top with shredded cheese—as much or as little as you like.

5. Microwave for one minute , remove and enjoy!!!!

You can also add other toppings if desired but seriously—it is good enough just like this for me.  The recipe makes a LOT and the leftover quinoa can be refrigerated to be used later for more delightful snacking!!!!

  1. Ok! We love quinoa, we love cheese, and we love those little scoops.. so this should work just fine for us.. 🙂 These would make a wonderful little afternoon under the Oaks treat!

    • It really surprised me how much I loved these. I mean I like quinoa and all but these are a great way to incorporate them into a snack that I love. 🙂 And I am all about the snacks.

  3. I’ve taken to preparing some type of hors d’oeuvre as we sit on the porch before dinner. Rick’s diet calls for the quinoa so we have pkgs. of it. I think we can break the diet and indulge in the taco seasoning and cheese. 🙂 Cool idea.

  5. Sounds yummy but I would have to leave out the seasoning because of garlic and the taco shells because I can’t eat wheat or carbs..lol It still sounds really good though.

  7. I need to try this quinoa. My daughter and son-in-law eat it often. I know nothing about it. Time to learn and this recipe sounds as good as any to start.

    • It is the favorite grain of the year, I think. WE have had it a lot of different ways. I think I first had it a couple years ago when we took a trip to California in a salad and I did not know how to pronouce it—–the waitress set me straight. 🙂
