Slightly Sweet Saturday


Everyone loves cookies and I have found one of the best peanut butter oatmeal cookie recipes ever and added a few tweaks of my own.  Please feel free to share.

Peanut Butter Oatmeal Cookies

2 cups quick cooking oats

2 cups flour

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1 cup peanut butter, creamy or chunky

1 cup butter

1 cup sugar

1 cup firmly packed brown sugar

2 eggs, large

2 tsp vanilla extract

1 12 ounce package semi sweet chocolate chips

1. Heat oven to 350 degrees.  In a small bowl combine oats, flour, baking powder, baking soda and salt and set aside.

2. In a large bowl beat peanut butter with electric mixer on medium speed until smooth.  Beat in sugars, eggs and vanilla until blended.  Beat in flour mixture until just blended. Add chocolate chips.

3. Drop by rounded tablespoons on ungreased baking sheet and bake for 13 minutes.  Transfer to wire racks and cool. Enjoy!P1020336
