Turkey Sausage Breakfast Casserole

I first made this casserole for Christmas and have made it several times since as it has become a favorite Saturday morning treat.  Each time I tweak it a bit and add different items to spice it up.  My favorite so far is the addition of fresh mushroom slices.  Takes very little effort and the most difficult part is waiting an hour for it to bake. Enjoy.

1 pound ground turkey sausage

4 eggs, lightly beaten

4 green onions, finally chopped

1 16 ounce package frozen hash browns

1/2 cup milk

1 1/2 cups shredded Cheddar Cheese (I use the low fat variety)

1. Place turkey sausage in a skillet and cook over medium high heat until evenly browned.  Drain and crumble and set aside.  (If you prefer you can substitute pre-cooked sausage crumbles that can be found in the same area as the bacon and breakfast sausage. )

2.  Preheat oven to 350 degrees.

3. In a large bowl, stir together eggs, green onions, hash browns, milk, cheddar cheese and cooked sausage.  Pour mixture into a 9 x 13 inch baking pan.

4. Place in preheated oven and bake for 60 minutes.

My add ins have included chopped red, yellow and green peppers, and mushrooms so far.  You can add whatever you like and it always turns out wonderfully.  Let me know what you come up with.

  2. Oh yeah! I would definitely add mushrooms and I would crumble up MorningStar’s Original Veggie Sausage patties. CH loves them! I don’t have the stuff on hand for this morning but it could very well be a treat tomorrow for lunch or breakfast for dinner. Thanks Beth Ann!

  3. This looks good! We love egg casseroles. There are never leftovers. I don’t know why I didn’t think to use turkey sausage before. The regular pork sausage gets overly rich. This looks perfect.

  7. I make something very similar and we love it. I haven’t used hash browns, tho! Crunch.

  8. This sounds delicious! Hubby would definitely add tomatoes to this, not me – I hate cooked tomatoes.
